Nourishing Winter Soup
It is getting cool up north, the maple and oak trees are animating the mountains with beautiful red gold and pink waves through the greens of the majestic pines. The scent of nature, celebrating its artistry for another year anchors me into the my earthly nature. Walking on a gorgeous mosaïque with leaves dancing at each step I take I give grace for this blessed morning. I came back home and lit the big wooden stove, I got so inspired to cook something to celebrate along with nature the artistry of my own year. . . one year ago I was starting my Teacher Training Classes at Yoga West. I learned the true art of celebrating the changes and shine through with all my colors in the seasons of life. I met so many wonderful people with such an array of beautiful colors . . . filled with joy and gratitude, I created the most wonderful soup I ever made. Actually I should say soups … see the recipes below and choose! Guru Ram Das was with me most of the time. I have been chanting his name since his Birthday on the 9th… These are definitely healing soups!
FIRST PREPARATION of my Guru Ram Das Soup!
Boil a couple of turmeric roots and some peppercorns in a cup and half of water. You can let this simmer a long time. This morning I am adding six to eight slices of ginger and two garlic cloves. (I do the turmeric and pepper routine every morning. I will share soon all the ways to use and enjoy this, even for desserts!)
2 cups of rich creamy coconut milk, the organic milk in cans is ok.
2 cups of water
4 tbs of chia
4 tbs of quinoa flakes
5 tbs of red lentils
5 tbs of green lentils
Bring this to a close boil then let simmer until cooked, about 20-25 minutes
Add the water from the turmeric roots and stir it in. I like to add a little almond oil on top in the middle of the bowl and lay a fresh leaf of basil or some chives. Herbs are the magic part of the meal, I reserve a place of honor for them in each serving, it makes people smile and smiles do magic!
